Wilber Dubón owns and manages Finca La Minda de Willy, a 6-hectare farm planted with approximately 2,500 trees per hectare. Wilber has been managing his farm for the past 11 years, expanding the area slowly each year. The varieties he cultivates are Pacamara, Pacas, Catuai, and Gesha. During the harvest season, only the ripest cherries are collected and hand-sorted for the best selection possible. For his naturals, cherries are placed directly on raised beds and moved daily for an average drying period of 18-20 days. When it comes to obstacles, Wilber tells us that the changing climate is the biggest one to adapt to as every season producers are having to be flexible and adjust to new conditions constantly.
